The Everlasting Green Onion

I wanted to share a trick that my mother taught me when I was a kid. She would chop the green onions (also known as scallions) down to a couple inches from the bulb and put the white bulbs in a mason jar next to the window.

Before you know it there was a stalk of green onions reproduced. It's a cheap and easy way to reuse your green onions. The only downfall is you can't much on the actual white onion part because you need that intact for the growth of the stems.

I love cooking with green onions because it adds flavor and crispness to my food. It's also a great addition to a fresh salad. Here's a recipe using green onions that I think you'll love.

Maui Burgers

Ingredients:
Beef or Turkey Burger Patties
1 small white onion
3 green onion stems
3 pineapples slices cut into 1/2 inch cubes
1/2 cup coleslaw
1 tsp rice vinegar
2 tsp brown sugar
2 tbsp soy sauce
2 tbsp sweet chili sauce
1 clove of garlic
2 tbsp olive oil

While the burgers are on the grill you can throw this all together in a sauce pan.

Start with heating the oil on high until you can see that it has thinned out and throw your white onion in the pan. You want to make these onions soft before adding other ingredients. Turn the heat to med-high and wait until they start to brown.

Add your garlic, and green onion stems next and fry for 2 minutes, then throw in your coleslaw, vinegar, brown sugar, sweet chili sauce and soy. When you see the flavors start to marry you want to turn it back to high heat and add your pineapple. Cook until the pineapple is soft and slightly browned, the sauce should thicken on its own. Do not cover pan while cooking or it will be too soft.

Overall Cooking time = 10 minutes. Perfect time for grilling that burger.
